Whole Wheat Banana Flax Pancakes

Today was a “normal” workout day – meaning I went to the gym and did cardio. More of a recovery day. Surprisingly my legs felt great after my run yesterday! I had more energy than I expected too. Maybe that’s because I drank Vega Sport before I worked out? I LOVE that stuff. If you need a natural form of energy I highly recommend it.

This morning I tried a new recipe from the Running Room (free) magazine (it’s in their Mar/Apr issue which is available online if you want the full recipe). In a nutshell it was 2 ripe bananas, a cup of whole wheat flour, 1/2 a cup of white flour, 3 tablespoons brown sugar, 2 eggs, 1/4 cup ground flax, a tablespoon of melted butter and a tablespoon of veggie oil and some baking powder. It made 14 pancakes and they were soooo good. Kept me going through my workout (one serving is 2 pancakes). They were quick to make – you mix the wet ingredients in one bowl and the dry in another then put them together and voila, you’re good to go. Great recipe.
