Caroline posted a great “grab and go” breakfast recipe the other day so I thought that I would follow suit and post my favourite healthy breakfast! I don’t have a lot of time in the mornings (being a person who values her sleep!) so I added a few “short-cuts” to this recipe to make the prep time even faster!
In a microwave safe container (I acutally use a microwave egg poacher but any small bowl will do) combine 1/4 cup egg whites (I buy these in a carton) with diced red onion and diced tomato and poach in the microwave for approximately 1 minute (times may vary depending on your microwave – mine takes a minute and 10 seconds). While that’s cooking pop 2 slices of WW bread (2 slices are only 1 point!) in the toaster and toast. When egg is done sandwich it between the toast slices with a tablespoon of fat-free ceddar cheese or feta. Total points for the breakfast 2 or 3 (depedning on how much cheese you use).
Varations: I sometime put the poached egg into a WW wrap – also one point – and then toast the whole thing with the cheese in my toaster oven for a minute or so.
play around with what you add to your breakfast sandwich or wrap – I have added spinach, sun dried tomatos, mushrooms and peppers. When doing the wrap salsa is also great (although not so much with the bread – makes it a bit soggy!)
