Ok – Caroline just posted the recipe for this fantastic soup so I thought I would review it.
I had the pleasure of having dinner with Caroline on Thursday night and knowing that I tend to watch what I eat pretty carefully she planned a fantastic, healthy meal – roasted veggie pizza and the Butternut Squash Soup.
Both parts of the dinner were fantastic (in fact I need to put in a request for the pizza recipe as well) but the butternut squash soup was particularly good. I was looking forward to trying the soup because I LOVE squash – that said I don’t always love soup. It’s not that I don’t like it per se, more so that I don’t often find it to be very satisfying as a meal.
I was pleasantly surprised to find that the soup was not only delicious it was incredibly satisfying. In fact I could very easily have had JUST the soup for dinner and skipped the pizza (but that would have been sad – the pizza was pretty special).
The soup was almost more of a stew with great chunks of squash and veggies in a thicker soup that left me feeling like I’d had a solid meal when I was finished.
I can’t comment on how easy the recipe is to make or follow because I haven’t tried it myself yet but I can promise I’ll be trying it soon! This recipe is a keeper!

It was easy to make and I highly encourage you to try it.
By the way, I completely agree with your comment about it being satisfying. I could easily have a bowl of the Butternut Squash Soup for lunch or dinner and it’s only 1 point!
